These Keto Buffalo Chicken Tenders are so good that you would never be able to tell them apart from the ones served on your local bar menu. Now you can have all the flavors of your favorite low carb appetizer, but without all the extra carbs.

I have always loved crispy breaded chicken tenders. Even as a child it would be the first thing my eyes spotted on the menu. Now, even as an adult, I still love them. Things are just a little different these days as I make my own keto chicken strips at home.

For many of you, your first instinct may be to walk away when you see pork rinds listed as an ingredient. Trust me when I tell you that you cannot taste them at all. I have never really been a fan of pork rinds, but when used as a low carb breading option, you would never even know they are there. Combining the pork rinds with the Parmesan cheese and the seasoning makes a perfectly crunchy keto breading mix that you can’t tell apart from its gluten-filled, floury counterpart. These keto buffalo chicken tenders are the real deal!

A few notes about these Keto Buffalo Chicken Tenders: Instead of frying them, you can bake them on parchment paper at 375°F for 15 to 20 minutes. For either method, be careful not to flip them too many times as this will cause the breading to fall off.

There are a couple of other ways I like to make these—tossed in low carb barbecue sauce or tossed in a fifty-fifty mixture of low carb barbecue sauce and the buffalo wing sauce. That last combination is my absolute favorite.

Ingredients

2 cups crushed pork rinds (get them here)
3/4 cup finely grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon onion powder
2 large eggs
1 1/2 pounds boneless skinless chicken breasts, cut into tender-size pieces
1 cup buffalo wing sauce (I use this brand)
1/4 cup butter (1/2 stick)

Instructions

Combine the pork rinds, Parmesan cheese, garlic powder, Italian seasoning and onion powder and mix until well incorporated. Pour the mixture into a thin layer on a large plate.
Crack the eggs into a shallow bowl and fork whisk. Dip the chicken tenders in the egg wash, and then dredge them in the breading mixture. Make sure both sides are thoroughly coated in the breading mixture.
Heat 1 to 2 inches of oil is a high-sided skillet. I like to use avocado oil for this. Once the oil is hot and begins to bubble slightly, drop the breaded chicken tenders into the oil. Fry until they are golden brown and crispy on both sides, about 3 minutes each side. Be careful not to flip them too much or else the breading will fall off.
Remove the chicken tenders from the oil and place them on paper towels to absorb the excess grease.
In a small sauce pan, heat the buffalo wing sauce and the butter over medium heat. Cook until the butter is melted and mixed into the sauce. Transfer the sauce to a large mixing bowl. Toss the tenders in the sauce until thoroughly coated.

Anyone who knows me, knows that I am obsessed with my Pork Egg Roll in a Bowl Recipe. I eat it multiple times per week. When I find a recipe I like, I stick with it. I am the type of person that can eat the same foods over and over without getting tired of them. In addition to the egg roll in a bowl, I also eat my Dill Chicken Salad recipe every week as well. They are both really easy to prepare, making for the perfect easy keto meal. Great for those hectic weeknights where you need a delicious 30 minute meal, or a quick and easy one pot meal. Both of these recipes keep well in the fridge, making them excellent for meal prep. As well all know, staying prepared and setting yourself up for success is essential to losing weight on a keto diet.

After eating the pork variation for so long, I started changing things up each time I would make it. Adding a little more ginger, switching up the meats, using more vinegar etc. Each time was just as good as the last. But I decided that it was time to make a Sesame Chicken Egg Roll in a Bowl variation. You will see that it shares most of the same ingredients as the pork egg roll in a bowl recipe, but in different proportions and with one big change. Instead of using coleslaw, I made this chicken egg roll in a bowl with broccoli slaw. It is SO good, and it really adds to the dish. Once the broccoli slaw cooks down and gets tender, it almost takes on a noodle like texture.

Most grocery stores carry broccoli slaw, you just might not know it because you have never looked for it. If you can't find it, I recommend asking a produce clerk to point you in the right direction. Alternately, you can always substitute and equal amount of shredded cabbage or coleslaw mix. You can even do half coleslaw and half broccoli slaw. That is one of my favorite ways to eat it.

I think one of the reasons I love these recipes so much is that they have the classic Asian inspired flavors that I missed from take out. Now I can have my healthier version of Chinese take out while keeping it low carb and keto friendly. Low carb chinese food recipes? Yes, please!

Also, making this recipe just gave me a good excuse to use my lightsaber chopsticks. I'm basically just an 80's nerd child, trapped in an adult 39 year old body!

Ingredients

3 tablespoons toasted sesame oil (I use this brand)
1 small red onion, chopped (about ½ cup)
4 gloves garlic, minced
5 green onions, sliced on a bias (white and green portions separated)
1 ½ pounds boneless chicken breast or thigh, cut into bite-sized pieces
1 teaspoon ginger powder (I use this brand)
1 teaspoon sea salt
½ teaspoon black pepper
1 tablespoon, plus 1 teaspoon Sriracha sauce or garlic chili sauce, or more to taste
20 ounces broccoli slaw
¼ cup gluten free soy sauce or coconut aminos (get it here or here)
2 tablespoon unseasoned rice vinegar
1 tablespoon toasted sesame seeds (I use this brand)

Instructions

Heat the sesame oil in a large skillet over medium-high heat.
Add the onion, garlic, and white portions of the green onions to the skillet. Sauté until the green onions are translucent and the garlic is fragrant.
Add the chicken, ginger, salt, pepper, and Sriracha to the pan. Sauté until the chicken is cooked through.
Add the broccoli slaw, soy sauce, and vinegar and sauté until the broccoli is tender.
Top with the green parts of the green onions and the sesame seeds before serving. Squirt some additional Sriracha over the top, if desired.

Simply Delicious Paleo Sweet & Sour Chicken


In this video I make a delicious paleo sweet and sour chicken. It requires a little bit of work but the end result is totally worth it.

You can make this dish a lot easier by simply not coating the chicken. This will save in time and make the dish quite a bit healthier. The downside is that you won’t end up with lovely crispy chicken.

One of the best things about this dish is how well it is the next day. You can easily reheat it in either a frypan or microwave. Both will work just fine, frypan is the way to go if you don’t like using microwaves.

This dish is great by itself but if you are looking for something to go with it then you should try coconut rice. It’s super easy to make and the end result is incredibly tasty.

1x 440g (15 ½ Oz) can Pineapple Pieces with unsweetened juice (Don’t drain)
1 onion, quartered
1 tsp. ginger, minced

Coconut aminos is pretty important so if you're able to pick it up you will be glad you did. It's just a soy alternative since soy sauce is not allowed on the paleo diet.

You might think this dish is a bit light in vegetables, if this the case then feel free to add more. There are quite a few different vegetables you can add such as carrots, bok choy and much more.

Whilst I use chicken thigh in the video you can replace this with basically any cut of chicken you want. If you have some leftover chicken, then that will also work great. Just be careful if you’re using leftover chicken then the seasoning might alter the flavour of this dish for better or worse.

If you need to bulk this recipe out with an extra then something like cauliflower rice is the perfect match for it.

• 4 chicken thighs, chopped
• 3-4 rashers bacon, cubed
• 1 onion, diced
• 1 tsp. garlic, crushed
• 1 red bell pepper, chopped
• 250g (9 oz.) button mushrooms, sliced
• 1x 400ml (14.5 oz.) can coconut cream
• 2 cups fresh kale, stems removed shredded
• Salt and pepper, to taste

Even though this dish is called chicken skillet you can basically use any kind of frying pan and get a similar result.

Despite being a creamy dish this will reheat quite well. Just make sure you keep the leftovers stored in the fridge in an airtight container until you need them. Simply reheat over the stove or in a microwave.

There are a ton of variations that you’re able to do on this delicious dish. For example, you can swap the kale for baby spinach or use a different type of mushroom. It’s totally up to you, you can get some pretty cool combinations going.

In this video, I go through the few short steps to making a homemade paleo chicken korma curry. It is a fantastic dish that is packed full of flavour, certainly a must try for any curry lover.

The standard recipe will feed about 4 people but if you’re looking to bulk it out a bit then adding some vegetables is a great way to achieve this. Just keep in mind vegetables like carrots and sweet potatoes will require extra cooking time.

• 1 Tbsp. coconut oil
• 1 onion, diced
• 1 Tbsp. ginger, crushed
• 2 tsp. garlic, crushed
• 1 Tbsp. tomato paste
• 500g Chicken breasts, cubed
• ½ Tbsp. chili (Paste, powder or fresh)
• ¼ Cup ground almonds
• 400ml (13 ½ Oz) can coconut cream
• ½ Cup Chicken Stock

Spice Mix
• 1 tsp. cayenne pepper
• 1 tsp. garam masala
• 1 tsp turmeric, ground
• 2 tsp. cumin, ground
• 2 tsp. coriander seeds, ground

There are many reasons why you should make a curry paste from scratch but the main reason is so you know exactly what has gone into it. Many supermarket brands have a lot of additives in them to help extend shelf life, improve flavour and more. The downside is these additives are typically not paleo friendly and can do you more harm than good.

Cauliflower rice is the perfect side to go with this dish. It is light and well worth putting the extra time in to make. One thing I love about cauliflower rice is that it doesn’t tend to make you bloated like normal white rice.

If you’re looking for a side to go with this dish, then something like the easy cauliflower rice is perfect. It’s very much like rice but instead is incredibly light and won’t leave you feeling bloated.

Crunchy & Tender Paleo Chicken Nuggets


In this video, I go through the steps to making some almond coated paleo chicken nuggets. They cook to be crunchy on the outside and nice n tender on the inside.

Whilst I fry these nuggets in the video you can instead bake them if that’s what you prefer. If you decide to bake them then make sure your oven is preheated to 200°C or 395°F.

These paleo friendly chicken nuggets are also great as leftovers. You can eat them cold or you can reheat them in a microwave or oven. They’re certainly not as good as when they're freshly cooked but they still taste pretty damn good.

• 2 Chicken Breasts
• ½ cup coconut flour
• 1 Cup almond flour
• 2 eggs
• 2 tsp. paprika
• Salt & Pepper
• ½ Cup coconut oil or a paleo friendly fat (For Frying)

One thing that you’re able to do if you’re not a fan of paprika is replace it with a different spice or leave it out completely. A cayenne pepper or similar is a great way to add a bit of a bite to the nuggets.

The nuggets are fine on their own along with a paleo friendly dipping sauce such as a homemade ranch dressing or ketchup. However, if you have the time then some sweet potato fries or a simple salad goes great with these.
