I love adding dried cranberries to things. They add the perfect hint of sweetness to salads, and they are amazing in low carb trail mix as well. But what I don't love is how high in sugar and carbs the store-bought brands are. Did you know that average store-bought brand has 33 grams of carbs and 29 grams of sugar for just 1/4 cup of dried cranberries? No thanks! I think I will just make my own sugar free low carb dried cranberries.

It can be extremely hard to find unsweetened dried cranberries, or sugar free dried cranberries in the stores. This no sugar added low carb dried cranberry recipe takes care of that problem! They are super easy to make, and are sweetened with erythritol instead of sugar, making them the perfect low carb treat.

I like to keep some of these on hand year round, so I recommend stocking up on fresh cranberries when they are in season, and keeping some in your freezer so you always have them on hand to make these sugar free low carb dried cranberries.

So how do you make dried cranberries anyway? Well, you can do this a couple of different ways – you can use a high-quality food dehydrator, or you can do it right in your oven. For this homemade dried cranberry recipe, I opted to use my oven.

It's a low and slow process, but the end result is worth it. You end up with perfectly chewy, sweet, but still tart, sugar free low carb dried cranberries.

Ingredients

2 – 12 ounce bags fresh cranberries
1 cup granular erythritol (get it here) or granular monk fruit sweetener (get it here)
3 tablespoons avocado oil
1/2 teaspoon pure orange extract (optional) (get it here)

Instructions

Preheat the oven to 200°F. Line two rimmed baking sheets with parchment paper or a silicone baking mats.
Rinse and dry the cranberries and remove any browned or soft berries. Slice the cranberries in half and add them to a mixing bowl.
Add the sweetener, avocado oil, and orange extract, if using. Toss to evenly coat all of the berries.
Line the berries in single layers across the baking sheets.
Bake for 3 to 4 hours, rotating the racks half way through.

These Keto Buffalo Chicken Tenders are so good that you would never be able to tell them apart from the ones served on your local bar menu. Now you can have all the flavors of your favorite low carb appetizer, but without all the extra carbs.

I have always loved crispy breaded chicken tenders. Even as a child it would be the first thing my eyes spotted on the menu. Now, even as an adult, I still love them. Things are just a little different these days as I make my own keto chicken strips at home.

For many of you, your first instinct may be to walk away when you see pork rinds listed as an ingredient. Trust me when I tell you that you cannot taste them at all. A few notes about these Keto Buffalo Chicken Tenders: Instead of frying them, you can bake them on parchment paper at 375°F for 15 to 20 minutes. For either method, be careful not to flip them too many times as this will cause the breading to fall off.

There are a couple of other ways I like to make these—tossed in low carb barbecue sauce or tossed in a fifty-fifty mixture of low carb barbecue sauce and the buffalo wing sauce. That last combination is my absolute favorite.

Ingredients

2 cups crushed pork rinds (get them here)
3/4 cup finely grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon onion powder
2 large eggs
1 1/2 pounds boneless skinless chicken breasts, cut into tender-size pieces
1 cup buffalo wing sauce (I use this brand)
1/4 cup butter (1/2 stick)

Instructions

Combine the pork rinds, Parmesan cheese, garlic powder, Italian seasoning and onion powder and mix until well incorporated. Pour the mixture into a thin layer on a large plate.
Crack the eggs into a shallow bowl and fork whisk. Dip the chicken tenders in the egg wash, and then dredge them in the breading mixture. Make sure both sides are thoroughly coated in the breading mixture.
Heat 1 to 2 inches of oil is a high-sided skillet. I like to use avocado oil for this. Once the oil is hot and begins to bubble slightly, drop the breaded chicken tenders into the oil. Fry until they are golden brown and crispy on both sides, about 3 minutes each side. Be careful not to flip them too much or else the breading will fall off.
Remove the chicken tenders from the oil and place them on paper towels to absorb the excess grease.
In a small sauce pan, heat the buffalo wing sauce and the butter over medium heat. Cook until the butter is melted and mixed into the sauce. Transfer the sauce to a large mixing bowl. Toss the tenders in the sauce until thoroughly coated.

Anyone who knows me, knows that I am obsessed with my Pork Egg Roll in a Bowl Recipe. I eat it multiple times per week. When I find a recipe I like, I stick with it. I am the type of person that can eat the same foods over and over without getting tired of them. In addition to the egg roll in a bowl, I also eat my Dill Chicken Salad recipe every week as well. They are both really easy to prepare, making for the perfect easy keto meal. Great for those hectic weeknights where you need a delicious 30 minute meal, or a quick and easy one pot meal. Both of these recipes keep well in the fridge, making them excellent for meal prep. As well all know, staying prepared and setting yourself up for success is essential to losing weight on a keto diet.

After eating the pork variation for so long, I started changing things up each time I would make it. Adding a little more ginger, switching up the meats, using more vinegar etc. Each time was just as good as the last. But I decided that it was time to make a Sesame Chicken Egg Roll in a Bowl variation. You will see that it shares most of the same ingredients as the pork egg roll in a bowl recipe, but in different proportions and with one big change. Instead of using coleslaw, I made this chicken egg roll in a bowl with broccoli slaw. It is SO good, and it really adds to the dish. Once the broccoli slaw cooks down and gets tender, it almost takes on a noodle like texture.

Most grocery stores carry broccoli slaw, you just might not know it because you have never looked for it. If you can't find it, I recommend asking a produce clerk to point you in the right direction. Alternately, you can always substitute and equal amount of shredded cabbage or coleslaw mix. You can even do half coleslaw and half broccoli slaw. That is one of my favorite ways to eat it.

I think one of the reasons I love these recipes so much is that they have the classic Asian inspired flavors that I missed from take out. Now I can have my healthier version of Chinese take out while keeping it low carb and keto friendly. Low carb chinese food recipes? Yes, please!

Also, making this recipe just gave me a good excuse to use my lightsaber chopsticks. I'm basically just an 80's nerd child, trapped in an adult 39 year old body!

Ingredients

3 tablespoons toasted sesame oil (I use this brand)
1 small red onion, chopped (about ½ cup)
4 gloves garlic, minced
5 green onions, sliced on a bias (white and green portions separated)
1 ½ pounds boneless chicken breast or thigh, cut into bite-sized pieces
1 teaspoon ginger powder (I use this brand)
1 teaspoon sea salt
½ teaspoon black pepper
1 tablespoon, plus 1 teaspoon Sriracha sauce or garlic chili sauce, or more to taste
20 ounces broccoli slaw
¼ cup gluten free soy sauce or coconut aminos (get it here or here)
2 tablespoon unseasoned rice vinegar
1 tablespoon toasted sesame seeds (I use this brand)

Instructions

Heat the sesame oil in a large skillet over medium-high heat.
Add the onion, garlic, and white portions of the green onions to the skillet. Sauté until the green onions are translucent and the garlic is fragrant.
Add the chicken, ginger, salt, pepper, and Sriracha to the pan. Sauté until the chicken is cooked through.
Add the broccoli slaw, soy sauce, and vinegar and sauté until the broccoli is tender.
Top with the green parts of the green onions and the sesame seeds before serving. Squirt some additional Sriracha over the top, if desired.

Crab cakes are one of those appetizers that my eyes naturally gravitate toward on a menu. However, it can be hard to find gluten-free keto crab cakes on a restaurant menu. Many of them contain bread crumbs, panko or something of the sort as a binding agent. In this recipe I took care of that problem and as a low carb substitute for breadcrumbs, I used crushed pork rinds to hold it all together. You can’t taste them, and they play the part of bread crumbs perfectly. Before you say “Ewwww” and click away from this page, I promise, promise, promise that you won't taste them at all. Not only do they help bind these keto crab cakes together, but they keep them from drying out as well. Now you can have your crab cakes and eat them, too!

These Keto Crab Cakes are a low carb nod to one of my favorite cities in the world – New Orleans! So, I felt it was only fitting to make sure they included the Cajun Holy Trinity – onions, celery, and bell pepper.

Loaded with lump crab meat, these low carb crab cakes are perfectly crispy and juicy at the same time. Before I made this recipe, I was on the hunt for a good keto crab cake and I just wasn't able to find one. SO, I just made my own!

Not only are these keto crab cakes perfectly high in fat and low in carbs, but they are also gluten free. Instead of using breadcrumbs or panko like a traditional crab cake might call for, I made these with crushed pork rinds.

I love to serve these crab cakes with my low carb Russian Dressing or Roasted Red Pepper Garlic Aioli.

Description

This recipe yields 8 fairly large, entrée-sized patties. If you make smaller patties, you could easily get 16 out of this recipe.

Ingredients

2 tablespoons butter
1 large rib celery, chopped
1/2 cup chopped mixed bell pepper
1 shallot, chopped
2 cloves garlic, minced
sea salt and black pepper, to taste
1 large egg
2 tablespoons mayonnaise (get my homemade recipe here)
1 tablespoon Worcestershire sauce
1 teaspoon spicy brown mustard
1 teaspoon hot sauce
1/2 cup grated Parmesan cheese
1/2 cup crushed pork rinds
1 pound lump crabmeat, picked clean of shells
2 tablespoons olive oil

Instructions

Heat a large sauté pan over medium heat. In the pan, heat the butter, then add the celery, bell pepper, shallot, garlic, sea salt and black pepper. Sauté until the vegetables are translucent and soft, about 10 minutes.
In a large mixing bowl, combine the egg, mayonnaise, Worcestershire, spicy brown mustard and hot sauce. Add the sautéed vegetables and mix until all the ingredients are well incorporated. Mix in the Parmesan cheese and pork rinds. Fold the crab into the mixture.
Line a large plate or rimmed baking sheet with parchment paper. Form the crab mixture into 8 equal-size patties. Place the patties on the prepared baking sheet and refrigerate for 1 to 2 hours.
Pan-fry in olive oil, in a large skillet over medium-high heat, until the crab cakes are golden brown and crispy on each side. Be careful not to flip them too many times or they will fall apart.

My husband Jon would tell you that this Blackened Steak Salad is about as manly as a salad can get. I would tell that you that even though it is delicious, I am instantly attracted to all the bright colors. I am a firm believer that we eat with our eyes first. This Blacked Steak Salad is fresh, crisp, and loaded with deliciously tender and juicy steak. My favorite thing about it is the wonderfully contrasting textures as you work your way through it. I love to serve this with Keto Avocado Ranch Dressing, or Creamy Chive Blue Cheese Dressing. But it is also amazing with Balsamic Shallot Vinaigrette. The acidity of the vinaigrette pairs nicely with the spice of the blackened seasoning. I also love to thrown in some Pickled Red Onions, but then again, I will use any excuse to put something pickled on just about everything.

These keto pickled red onions are super easy to make and add a lot of flavor to anything you add them to. I put them on salads, protein bowls, eggs, anything! In fact, I look for excuses to add them to my meal.

I'm not sure when the first time I ever had pickle red onions was, but I can tell you exactly when I fell in love with them. Back in January, during my Craveable Keto book tour, I was making a lot of trips to various Whole Foods salad bars. They have the biggest and best salad bars around, and the best thing about them, is that every single prepared item on the salad bar lists every single ingredient, so you always know exactly what you are getting. Almost every one I went to had pickled onions and I was piling them on all my salads. They were so good, BUT, they had sugar in them. I knew that as soon as the tour was over and I was home and back in the kitchen, that I wanted to make my own low carb pickled red onions recipe.

I think the reason I love these low carb pickled red onions so much is that they have the perfect balance of bitterness from the red onion, sweetness from the erythritol, and acidity from the vinegars. When you put those three things together, you have a match made in heaven. I have been putting them on everything – salads, lunch bowls, tacos, steak, eggs, etc. I am actually guilty of building an entire meal around whether or not it would go good with these pickled red onions.

The other thing I really like about them is that they will keep in the refrigerator for at least a couple of months… if you can make them last that long, that is. Just store them right in the mason jar you made them in. I have swapped out all my metal mason jar lids, for these reusable plastic lids. They are so much easier to clean, and then I can avoid the ring of rust from the metal lids. And since I store everything in mason jars, they come in really handy.

Pickled Red Onions

Description

The perfect blend of sweet, sour, and salty. I love to put these onions on everything from my morning eggs, to my lunch time salad, to the top of my steak for dinner.

Ingredients

1 cup red wine vinegar
1 cup apple cider vinegar (I use this brand)
2 tablespoons granular erythritol, more to taste (I use this brand)
1 teaspoons sea salt
2 medium red onions, thinly sliced
6 cloves garlic, peeled and halved
1 teaspoon dried oregano leaves (I use these organic seasonings)
Pinch of red pepper flakes

Instructions

In a saucepan over medium heat, combine the red wine vinegar, apple cider vinegar, erythritol, and salt. Bring to a light boil, stirring until the erythritol and salt are dissolved.
Put the onions, garlic, oregano and red pepper flakes into a 32 ounce mason jar.
Pour the liquid over top, submerging the onions and mixing in the oregano and red pepper flakes.
Let the jar sit on the counter for 1 hour, cap and then refrigerate. (I've switched to these caps)
Store in the refrigerator for up to 2 months. You can eat them after 2 hours, but they just get better and better the longer they are in the fridge.

Description

Traditional Golden Milk recipes do not have espresso. I am just a big fan of coffee, so I decided to take a tradition turmeric tea (Golden Milk) and turn it into a frothy, and delicious latte. But the espresso is completely optional. This drink is amazing with or without it. I have provided instructions for how to make it with or without.

Ingredients

1 1/2 cups unsweetened coconut milk (I use So Delicious)
1/2 teaspoon pure vanilla extract (I use this brand)
1/2 teaspoon turmeric (I use this brand)
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger (I use this brand)
pinch of black pepper
pinch of Himalayan pink salt
2 shots espresso, optional
1 teaspoon erythritol, more to taste, optional (I use this brand)

Instructions
With an espresso machine:

Add the coconut milk, or almond milk to the milk steaming pitcher. Add the vanilla extract, turmeric, cinnamon, ginger, pepper, and salt. Stir to mix, and use the steamer wand to heat and froth the milk. This will fully incorporate the spices into the coconut milk.
Pull 2 shots of espresso from the machine and pour them into a mug. Top with golden milk, and sprinkle cinnamon and turmeric on top. Stir in erythritol, to taste, if using.

A More Traditional Take on Turmeric Tea Golden Milk:

Add the coconut milk, vanilla, turmeric, cinnamon, ginger, pepper, salt, and erythritol, if using, to a medium sauce pan over medium heat.
Whisk to combine all ingredients. Heat until the golden milk is hot, but not boiling.
Garnish with a sprinkle of cinnamon and turmeric before serving.

This Pork Belly Wedge Salad just moved up the list to become my all-time favorite low carb salad recipe. It’s right up there with my Dill Chicken Salad. The saltiness of the crunchy pork belly, mixed with the cool chive flavor of the blue cheese dressing is a match made in heaven. Add the Everything Bagel Seasoning to the mix and we have a real winner. Plus, I think we all know how I feel about all things dill related.

For the pork belly in this recipe, I use the Trader Joes pre-cooked pork belly. They season it and braise it for 12 hours before vacuum sealing it and putting it on the shelves. It is so much easier to buy it this way. That way, all I have to do is slice it and pan fry it until it is nice and crispy. Super easy, and SO DELICIOUS! If you can’t find this pre-cooked pork belly, or don’t want to take the time to make your own pork belly, you can always use crispy bacon, prosciutto, or pancetta.

For the dressing on this salad, I use my Creamy Chive Blue Cheese Dressing. If you are not a fan of blue cheese, this dressing is also fantastic with feta cheese. And if you want to switch up the dressing altogether, it is also fantastic with my Keto Avocado Ranch Dressing.

This Creamy Chive Keto Blue Cheese Dressing is seriously one of the best salad dressings I've ever tasted.
